Fish cordon bleu

So when thinking about fish it is always the same old boring recipe of fish curry isn't it . And when it is so hot hot hot !!! we have to think further to accommodate our taste so that we can enjoy a meal. This is where we could be stuck in a dilemna which would never end . Having visualized all the possible options in my mind , ultimately I do not have the choice but to pick one recipe. It is saturday and dinner at my home is kept simple like pasta, rice casserole, kentucky ( of course homemade ) etc.

Hmmmm fish cordon bleu comes to my mind and I instantly decided to make this sophisticated and delicious fish parcel. Let's get started without hesitation.


INGREDIENTS:
6 fish fillets (thin)
Some thin tomato slices
Some cheese slices
Few Tbsp flour
2 eggs beaten
Breadcrumbs
Salt , pepper, red chilli powder
1 tsp garlic paste

METHOD:
Season the fillets with salt, pepper, chilli powder and garlic paste. Place fillets flat on a board, put one tomato slice and one  cheese slice on each fish fillet. Delicately fold the fillet to encase the fillings. Coat each fish parcel in flour, egg and finally the breadcrumbs. Repeat coating once more and trying to cover every surface. I did not have any problem at this stage as mine were well coated.

Place on a plate, cover and refrigerate for 1/2-1 hour. I skipped this step as I was out of time. Shallow fry the fish parcels in medium hot oil for 2-3 minutes each side or until golden brown, turning once during cooking.

Serve over rice or with bread, salad, french fries, ketchup, chilli sauce, mayonnaise or any other sauces of your choice. Or you could  use your imagination and make a more elaborate meal by serving with other accompaniments of your choice and a chilled fruit juice , or other punches etc.

Fish Potatoes Roll Ups

When you are out of time and hungry this roll up is the solution to end your hunger as it is made in a jiffy . Really?... Of course if you have everything handy and some leftovers....like fried fish , cooked chicken, cooked or roast veggies or mixed veggies.And of course some mashed potatoes and very thin naan or tortillas or any wrap in the freezer.Yes, it is lunch time, so let's get started.
