Meat curry with almonds

It is the first time since the festive season has gone that I made an elaborate  dish. And it was on the occasion to commemorate the death of a very very outstanding, religious and great  person. So after a quick reference through my notes I decided to make this delicate and mouthwatering meat dish. It was specially made to share with the poor, family and friends. Here it is this delicious recipe

Ingredients:
1\kg meat
3 tbs ginger garlic paste
1 tbsp coriander powder
2 tsp garam masala powder
 1tsp cumin seeds
 1/4 tsp turmeric powder
1tsp whole cardamom pods
1/2 tsp cardamom powder
 1 pinch of nutmeg powder
1/2 cup yogurt
1/tsp red chilli powder
salt and pepper to taste
chopped green coriander
1 green chilli sliced in half
1 pinch of zafraan (saffron) soaked in few tbsp of boiling water
few blanched and peeled almonds
1 tsp sesame seeds
3 big onions sliced and deep fried with a pinch of salt and 1tsp of ghee until golden brown, remove on a plate leave to cool.
3 potatoes cut into 3 or 4 pieces,add a little yellow food and deep fried in the same oil after frying the onions.

Method:
    Cut meat into thin slices. Marinate with 1 tbsp of giner garlic paste, 2 tbsp of yogurt, turmeric powder, 1 tsp garam masala powder, few cardamom pods, 1/2 tsp cumin seeds, little salt,  a pinch red chilli powder and pepper for 1 hour.
    Heat a pan with 3 tbsp of oil. Add the chopped onion, cumin seeds and cardamom pods. Cook till light golden brown. In a blender puree sesame seeds, blanched almonds and half of the brown onion. Add to the pan with the yogurt.  Add the ginger garlic paste, coriander powder, nutmeg powder, 1/2 tsp garam masala, chilli powder. Stir well then add the meat. Add salt, pepper, cook for a few minutes then add the pureed tomatoes. Add 1/2 cup of water, cover and cook till meat is half done. Keep stirring so that it does not stick at the bottom.  Add the deep fried potato pieces, stir to coat with the spices. Add a little more water, cover and cook till potatoes are well cooked. Add more water if you want more gravy. Leave to boil.
    Squatter the top with the remaining half of the brown onion, sprinkle with 1/2 tsp garam masala sliced chillies green coriander, adjusting salt  and add1 tsp of ghee. Cover and cook about 3 minutes allowing the flavour to develop.
     I serve it with a special rice with brown onions and green herbs and spices which recipe I will be sharing in the next post. You could serve it with rice , rotis and naan, salad and chilli pickles or any kind of pickles.

So when thinking about fish it is always the same old boring recipe of fish curry isn't it . Fish Potatoes Roll Ups

When you are out of time and hungry this roll up is the solution to end your hunger as it is made in a jiffy . Really?... Of course if you have everything handy and some leftovers....like fried fish , cooked chicken, cooked or roast veggies or mixed veggies.And of course some mashed potatoes and very thin naan or tortillas or any wrap in the freezer.Yes, it is lunch time, so let's get started.
