As promised I am going to share the recipe of this rice flavored with whole spices, fresh herbs and deep fried brown onion. You can serve this rice as accompaniment with a spicy, indian meat or chicken dish. It is very simple and easy. So let us get started.
Ingredients:
1 cup basmati rice
3 cardamom pods
1 clove
1 small piece of cinnamon
salt
2 onions
oil
2 tbsp of mint leaves chopped
2 tbsp of coriander leaves chopped
Method:
Soak the rice for 30 minutes. Slice the onions into thin rings. Deep fry in oil with 1/2 tsp of ghee and a pinch of salt until golden brown. The salt helps in making it a beatiful golden colour and crisp. Remove onto a plate and leave to cool. Boil a lot of water in a pan with salt and all the whole spices. cook the rice till done, then drain.
In a pan place half of the rice, sprinkle with half of the mint and coriander leaves, some brown onions. Add the rest of the rice, sprinkle with the remaining coriander and mint leaves and brown onions.
Option:
If you are not following a diet, you can drizzle 1 tbsp of oil (the same oil in which you fried the onion) on top of the rice for more richness and improving the taste as well. Otherwise leave it out.
Soak a few strands of saffron in a little boiling water. Sprinkle the water on top of the rice
You could do this when you have guests for dinner or on a Sunday.
